Description

  • 1 lb (450g) ground sausage (mild or spicy)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 3 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1/2 tsp dried thyme
  • 1/2 tsp dried sage (optional)
  • Fresh thyme, for garnish (optional)

For the Pastry:

  • 1 sheet of puff pastry (store-bought or homemade)
  • 1 egg, beaten (for egg wash)

Instructions

  • Prepare the Filling:
    • In a large skillet over medium heat, add olive oil. Once hot, add the sausage and cook until browned and crumbled. Remove the sausage from the pan and set it aside.
    • Add the chopped onion to the skillet and sauté until translucent (about 3-4 minutes). Add the garlic and cook for an additional minute until fragrant.
    • Sprinkle the flour over the mixture, stirring constantly to create a roux. Cook for 1-2 minutes until the flour is slightly golden.
    • Slowly pour in the milk, whisking constantly to prevent lumps. Add the heavy cream, pepper, salt, thyme, and sage. Stir until the mixture thickens into a creamy sauce.
    • Return the cooked sausage to the skillet and mix well. Let the filling cool slightly.
  • Preheat and Prepare the Pastry:
    • Preheat your oven to 400°F (200°C).
    • Roll out the puff pastry to fit your pie dish. Line the dish with the pastry, trimming any excess.
  • Assemble the Pie:
    • Pour the sausage filling into the pie crust, spreading it evenly.
    • Place another layer of puff pastry over the top (or use trimmings to create a decorative pattern).
    • Brush the top with the beaten egg for a golden finish.
  • Bake the Pie:
    • Bake in the preheated oven for 25-30 minutes, or until the pastry is puffed and golden brown.
    • Remove from the oven and let it cool for 5-10 minutes before serving.
  • Garnish and Serve:
    • Garnish with fresh thyme if desired. Slice and enjoy warm!
