- 1 small onion, finely chopped

- 1 1/2 cups milk
- 1/2 cup heavy cream
- 1/2 tsp black pepper
- 1/2 tsp salt (adjust to taste)
- 1/2 tsp dried thyme
- 1/2 tsp dried sage (optional)
- Fresh thyme, for garnish (optional)
For the Pastry:
- 1 sheet of puff pastry (store-bought or homemade)
- 1 egg, beaten (for egg wash)

- Prepare the Filling:
- In a large skillet over medium heat, add olive oil. Once hot, add the sausage and cook until browned and crumbled. Remove the sausage from the pan and set it aside.
- Add the chopped onion to the skillet and sauté until translucent (about 3-4 minutes). Add the garlic and cook for an additional minute until fragrant.
- Sprinkle the flour over the mixture, stirring constantly to create a roux. Cook for 1-2 minutes until the flour is slightly golden.
- Slowly pour in the milk, whisking constantly to prevent lumps. Add the heavy cream, pepper, salt, thyme, and sage. Stir until the mixture thickens into a creamy sauce.
- Return the cooked sausage to the skillet and mix well. Let the filling cool slightly.
- Preheat and Prepare the Pastry:
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry to fit your pie dish. Line the dish with the pastry, trimming any excess.
- Assemble the Pie:
- Pour the sausage filling into the pie crust, spreading it evenly.
- Place another layer of puff pastry over the top (or use trimmings to create a decorative pattern).
- Brush the top with the beaten egg for a golden finish.
- Bake the Pie:
- Bake in the preheated oven for 25-30 minutes, or until the pastry is puffed and golden brown.
- Remove from the oven and let it cool for 5-10 minutes before serving.
- Garnish and Serve:
- Garnish with fresh thyme if desired. Slice and enjoy warm!
