Ingredients

  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup heavy cream
  • 1/2 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice (optional, for added freshness)
  • 1/2 cup graham cracker crumbs (optional for a crunchy base)

Instructions

  1. Prepare the strawberries: Wash, hull, and slice the strawberries. Set them aside in a bowl. If you want the strawberries sweeter, sprinkle a little sugar over them and let them sit for 10 minutes to release some juices.
  2. Make the creamy filling: In a mixing bowl, combine heavy cream, mascarpone cheese, powdered sugar, and vanilla extract. Use an electric mixer to beat until smooth and creamy, about 3-4 minutes.
  3. Assemble the dessert: In serving glasses or bowls, layer the creamy mixture with fresh strawberries. Start with a layer of cream, then add a layer of strawberries. Repeat until the glasses are filled.
  4. Add a crunchy base (optional): If using, sprinkle graham cracker crumbs on the bottom of the glasses before adding the cream and strawberries.
  5. Chill and serve: Refrigerate the dessert for at least 30 minutes before serving to allow the flavors to meld. Serve chilled and garnish with extra fresh strawberries or mint leaves.

Notes

  • For a dairy-free version, substitute the mascarpone cheese with coconut cream or another non-dairy cream.
  • You can also swap the graham cracker crumbs for crushed biscuits or a gluten-free alternative if desired.
