- 24 large mushrooms
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Remove the stems from the mushrooms and finely chop them.
- In a large bowl, combine the cream cheese, sour cream, Parmesan cheese, green onions, red bell pepper, parsley, salt, and pepper. Mix well.
- Stuff the mushroom caps with the cream cheese mixture.
- Place the stuffed mushrooms on a baking sheet and bake for 15-20 minutes, or until the mushrooms are tender and the filling is bubbly and hot.
- Serve warm with your favorite crackers or bread.
