- 1 package (8 oz) Velveeta cheese, cut into cubes
- 1/2 cup sour cream
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 8 oz penne pasta
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the penne pasta according to package instructions. Drain and set aside.
- While the pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add the beef strips and cook until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for an additional 1 minute, until fragrant.
- Pour in the beef broth, cream of mushroom soup, Velveeta cheese, Worcestershire sauce, and Dijon mustard. Stir well and bring to a simmer. Let the sauce cook for 5-7 minutes, until the Velveeta cheese is fully melted and the sauce is creamy.
- Return the cooked beef to the skillet and stir in the sour cream. Let the mixture simmer for an additional 2-3 minutes to heat through. Season with salt and pepper to taste.
- Serve the creamy beef Stroganoff over the cooked penne pasta. Garnish with fresh chopped parsley and enjoy!
