- 7 oz (200g) Graham crackers
- 6 tablespoons (90g) melted butter
- 2/3 cup (160g) sour cream
- 2 1/2 cups (560g) room temperature cream cheese
- 1/4 cup (60ml) heavy whipping cream
- 3 eggs
- 1 cup (200g) granulated sugar
- 1 teaspoon pure vanilla extract
- 6–8 teaspoons sugar for topping
Instructions
- Preheat the oven to 325°F (160°C).
- Crush the graham crackers into fine crumbs and mix with melted butter. Press into a parchment-lined 9×9-inch baking pan. Bake for 8-10 minutes and set aside to cool.
- In a large bowl, beat cream cheese with sugar until smooth. Add vanilla, sour cream, and heavy cream, mixing until fully incorporated. Add eggs one by one, mixing until blended.
- Pour the cheesecake filling over the cooled crust and spread evenly. Bake for 35-45 minutes until the center is nearly set. Cool at room temperature for 1 hour, then refrigerate for at least 4 hours.
- Carefully remove the cheesecake, trim edges if desired, and cut into bars.
- Sprinkle sugar on top of each bar and use a kitchen torch to caramelize until crispy and golden. Let set for 5 minutes before serving.
