Description

Indulge in these decadent Crème Brûlée Cheesecake Bars, combining the creamy texture of cheesecake with the crispy, caramelized topping of classic crème brûlée. Perfect for special occasions or a sweet treat at home!

Ingredients

Scale
  • 7 oz (200g) Graham crackers
  • 6 tablespoons (90g) melted butter
  • 2/3 cup (160g) sour cream
  • 2 1/2 cups (560g) room temperature cream cheese
  • 1/4 cup (60ml) heavy whipping cream
  • 3 eggs
  • 1 cup (200g) granulated sugar
  • 1 teaspoon pure vanilla extract
  • 68 teaspoons sugar for topping

Instructions

  • Preheat the oven to 325°F (160°C).
  • Crush the graham crackers into fine crumbs and mix with melted butter. Press into a parchment-lined 9×9-inch baking pan. Bake for 8-10 minutes and set aside to cool.
  • In a large bowl, beat cream cheese with sugar until smooth. Add vanilla, sour cream, and heavy cream, mixing until fully incorporated. Add eggs one by one, mixing until blended.
  • Pour the cheesecake filling over the cooled crust and spread evenly. Bake for 35-45 minutes until the center is nearly set. Cool at room temperature for 1 hour, then refrigerate for at least 4 hours.
  • Carefully remove the cheesecake, trim edges if desired, and cut into bars.
  • Sprinkle sugar on top of each bar and use a kitchen torch to caramelize until crispy and golden. Let set for 5 minutes before serving.

Notes

  • Ensure cream cheese and eggs are at room temperature for best results.
  • Watch the bars closely when caramelizing to avoid burning.
