Instructions
- Make the Custard: In a mixing bowl, whisk together cornstarch, sugar, and salt. Add egg yolks and whisk until lightened in color. In a saucepan, heat milk, vanilla extract, and vanilla bean seeds until bubbles form at the edges. Slowly whisk warm milk into egg mixture to temper. Return to saucepan and cook over medium-low heat until thickened. Stir in butter until smooth. Cover and refrigerate until chilled.
- Make the Dough: In a large bowl, whisk together warm milk, yeast, sugar, salt, and egg. Add softened butter and flour; knead until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot for about 1.5 to 2 hours or until doubled in size.
- Shape and Fry the Donuts: Roll out dough to about 1/2-inch thickness on a floured surface. Cut out donuts with a cookie cutter. Place on an oiled baking sheet; cover and let rise for another 30 minutes. Heat oil in a deep pan to between 325°F–350°F and fry donuts until golden brown on both sides. Drain on paper towels or a wire rack.
- Fill the Donuts: Transfer chilled custard into a piping bag fitted with a small tip. Poke a hole in each donut and pipe in custard until full.
- Make the Brûlée: In a saucepan over medium heat, combine sugar and water; cook without stirring until it turns deep amber color. Dip each donut’s top into hot caramel or spoon it over to create a crackly layer.
