Description

Experience the ultimate dessert fusion with these Crème Brûlée Donuts! Fluffy yeast donuts filled with rich vanilla bean custard and topped with a crackly sugar layer, they are a dreamy treat perfect for any special occasion.

Ingredients

Scale

For the Donut Dough:

  • 3 2/3 cups all-purpose flour
  • 1 1/4 cups whole milk, warm (about 110°F)
  • 1 1/2 tsp instant yeast
  • 1/3 cup granulated sugar
  • 1 tsp salt
  • 1 large egg, room temperature
  • 6 tbsp unsalted butter, softened
  • Vegetable oil, for frying

For the Custard Filling:

  • 1 2/3 cups whole milk
  • 2 tsp vanilla extract
  • 1 vanilla bean, seeds scraped
  • 1/4 tsp salt
  • 1/4 cup cornstarch
  • 1/2 cup sugar
  • 4 large egg yolks
  • 2 tbsp unsalted butter

For the Brûlée:

  • 1 cup granulated sugar
  • 1/4 cup water

Instructions

  1. Make the Custard: In a mixing bowl, whisk together cornstarch, sugar, and salt. Add egg yolks and whisk until lightened in color. In a saucepan, heat milk, vanilla extract, and vanilla bean seeds until bubbles form at the edges. Slowly whisk warm milk into egg mixture to temper. Return to saucepan and cook over medium-low heat until thickened. Stir in butter until smooth. Cover and refrigerate until chilled.
  2. Make the Dough: In a large bowl, whisk together warm milk, yeast, sugar, salt, and egg. Add softened butter and flour; knead until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm spot for about 1.5 to 2 hours or until doubled in size.
  3. Shape and Fry the Donuts: Roll out dough to about 1/2-inch thickness on a floured surface. Cut out donuts with a cookie cutter. Place on an oiled baking sheet; cover and let rise for another 30 minutes. Heat oil in a deep pan to between 325°F–350°F and fry donuts until golden brown on both sides. Drain on paper towels or a wire rack.
  4. Fill the Donuts: Transfer chilled custard into a piping bag fitted with a small tip. Poke a hole in each donut and pipe in custard until full.
  5. Make the Brûlée: In a saucepan over medium heat, combine sugar and water; cook without stirring until it turns deep amber color. Dip each donut’s top into hot caramel or spoon it over to create a crackly layer.
  1. Serve and Enjoy: Best enjoyed fresh while still warm with their crispy tops and creamy filling.

Notes

  • Ensure your yeast is fresh for optimal rising.
  • Allow sufficient time for dough to rise properly.
  • Monitor oil temperature while frying to avoid greasy donuts.
  • Chill custard thoroughly before filling donuts.
  • Use caution when working with hot caramel.
