Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
- Beat in the egg and vanilla extract, mixing until fully combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Fold in the toffee bits, ensuring they are evenly distributed throughout the dough.
- Place the coarse sugar in a small bowl. Roll tablespoon-sized portions of dough into balls and then roll each dough ball in the coarse sugar to coat.
- Place the sugar-coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges of the cookies are golden brown and the tops have cracked.
