Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
  3. Beat in the egg and vanilla extract, mixing until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  5. Fold in the toffee bits, ensuring they are evenly distributed throughout the dough.
  6. Place the coarse sugar in a small bowl. Roll tablespoon-sized portions of dough into balls and then roll each dough ball in the coarse sugar to coat.
  7. Place the sugar-coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges of the cookies are golden brown and the tops have cracked.
  9. Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  10. Store in an airtight container for up to 1 week.
