2 medium zucchinis

Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends, then slice each zucchini into 1/2-inch thick strips (like fries).

Prepare the Breading: In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper. Mix everything together well.

Dunk in Egg: In a separate shallow bowl, beat the eggs. Dip each zucchini strip into the egg, ensuring it’s coated, then transfer it to the breadcrumb mixture. Press gently to ensure the breadcrumbs adhere to the zucchini.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Air Fry the Zucchini Fries: Lightly spray the air fryer basket with olive oil or cooking spray. Arrange the zucchini fries in a single layer in the air fryer basket, leaving some space between each fry. Spray the tops lightly with olive oil to help them crisp up.
