- 2 ½ lbs russet potatoes, peeled and cut into matchsticks
- 3 tbsp olive oil
- 1 ½ tsp salt, divided
- 1 tsp black pepper, divided
- 3 tbsp unsalted butter
- 4 garlic cloves, minced
- ⅓ cup fresh parsley, chopped
- 1 cup Parmesan cheese, finely grated
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large plastic bag, combine matchstick potatoes, olive oil, 1 tsp salt, and ½ tsp black pepper. Shake to coat evenly.
- Spread the fries on the baking sheet in a single layer, leaving space between them.
- Bake for 35-45 minutes, flipping halfway through, until crispy.
- While baking, melt the butter in a skillet and add minced garlic. Sauté for 1-2 minutes until fragrant.
- Toss the baked fries with garlic butter, Parmesan, parsley, and remaining salt and pepper.
- Serve topped with any extra Parmesan, garlic, and parsley.
Notes
- Soaking the potatoes in cold water for 30 minutes can enhance crispiness.
- For variations, consider adding spices or using sweet potatoes.
