- 1 cup panko breadcrumbs
- 1/4 cup cornstarch
- 2 eggs, beaten
- 1/2 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (adjust to taste)
- 1 tsp honey
- Salt and pepper (to taste)
Instructions
- Preheat the oven to 400°F (200°C). Alternatively, you can heat oil for frying if you prefer.
- Season the salmon cubes with salt and pepper.
- Coat the salmon cubes in cornstarch, dip them into the beaten eggs, then roll them in panko breadcrumbs.
- Arrange the coated salmon on a baking sheet and bake for 12-15 minutes, or until golden and crispy. If frying, cook until golden and crispy.
- In a bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and honey to make the bang bang sauce.
- Toss the crispy salmon bites in the bang bang sauce and serve immediately.
Notes
- Adjust the sriracha to your preferred level of spiciness.
- These salmon bites can be served with a side of steamed vegetables or over rice for a complete meal.
- If you’re frying the bites, make sure the oil is hot enough to get them crispy without absorbing too much oil.
