Description

Crunchy, golden taquitos filled with seasoned shredded beef, served with a smoky, spicy chipotle dipping sauce. Perfect for appetizers or a flavorful snack.


Ingredients

    • 1 lb shredded cooked beef (such as brisket or roast beef)
    • 1 cup shredded cheddar cheese
    • 1/2 cup finely chopped onion
    • 1 tsp ground cumin
    • 1 tsp chili powder
    • Salt and pepper, to taste
    • 12 small corn tortillas
    • Vegetable oil, for frying

  • For the Chipotle Sauce:
  • 1/2 cup mayonnaise
  • 2 tbsp adobo sauce from canned chipotle peppers
  • 1 chipotle pepper, minced (adjust to taste)
  • 1 tbsp lime juice
  • Salt to taste

Instructions

  1. In a bowl, combine shredded beef, cheese, chopped onion, cumin, chili powder, salt, and pepper.
  2. Warm tortillas briefly to make them pliable. Spoon about 2 tablespoons of beef mixture onto each tortilla and roll tightly.
  3. Secure with toothpicks if needed.
  4. Heat about 1 inch of vegetable oil in a deep skillet over medium-high heat.
  5. Fry taquitos in batches until golden and crispy, about 2-3 minutes per side.
  6. Drain on paper towels.
  7. For the sauce, whisk together mayonnaise, adobo sauce, minced chipotle pepper, lime juice, and salt in a small bowl.
  8. Serve taquitos hot with chipotle sauce on the side for dipping.

Notes

  • For a healthier option, bake taquitos at 400ยฐF for 15-20 minutes, flipping halfway.
  • Use flour tortillas if preferred, but corn gives better crispiness.
