- 1 tsp ground cumin
- 1 tsp chili powder

- 12 small corn tortillas
- Vegetable oil, for frying

- For the Chipotle Sauce:
- 1/2 cup mayonnaise
- 2 tbsp adobo sauce from canned chipotle peppers
- 1 chipotle pepper, minced (adjust to taste)
- 1 tbsp lime juice
- Salt to taste
Instructions
- In a bowl, combine shredded beef, cheese, chopped onion, cumin, chili powder, salt, and pepper.
- Warm tortillas briefly to make them pliable. Spoon about 2 tablespoons of beef mixture onto each tortilla and roll tightly.
- Secure with toothpicks if needed.
- Heat about 1 inch of vegetable oil in a deep skillet over medium-high heat.
- Fry taquitos in batches until golden and crispy, about 2-3 minutes per side.
- Drain on paper towels.
- For the sauce, whisk together mayonnaise, adobo sauce, minced chipotle pepper, lime juice, and salt in a small bowl.
- Serve taquitos hot with chipotle sauce on the side for dipping.
Notes
- For a healthier option, bake taquitos at 400ยฐF for 15-20 minutes, flipping halfway.
- Use flour tortillas if preferred, but corn gives better crispiness.
