Description

Crispy Brown Sugar Mustard Chicken Thighs are a savory-sweet dish that combines tender chicken thighs with a deliciously sticky brown sugar and mustard glaze, resulting in crispy, flavorful skin. Perfect for a quick and satisfying dinner!

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 1/4 cup brown sugar, packed
  • 2 tbsp Dijon mustard
  • 2 tbsp whole-grain mustard (optional, for extra texture)
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional, for heat)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Pat the chicken thighs dry with paper towels. Rub olive oil all over the chicken thighs, and season with salt, pepper, and smoked paprika.
  3. In a small bowl, whisk together brown sugar, Dijon mustard, whole-grain mustard (if using), soy sauce, garlic, and red pepper flakes (if using) until smooth.
  4. Place the chicken thighs skin-side up on the prepared baking sheet. Brush the brown sugar mustard glaze generously over the top of each chicken thigh, reserving some glaze for later basting.
  5. Bake in the preheated oven for 35-40 minutes, or until the chicken skin is crispy and the internal temperature reaches 165°F (74°C).
  6. During the last 5-10 minutes of cooking, baste the chicken with the reserved glaze to enhance the caramelization and flavor.
  7. Once done, remove from the oven and let the chicken rest for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

  • For extra crispy skin, broil the chicken thighs for the last 2-3 minutes of cooking, keeping a close eye to prevent burning.
  • You can substitute honey for the brown sugar if you prefer a different sweetness.
  • Serve with roasted vegetables, mashed potatoes, or a simple salad for a complete meal.
