Description

  • These crispy cheddar corn potato fritters are a delicious combination of tender mashed potatoes, sweet corn, and melty cheddar cheese, all coated in a crispy golden crust. Perfect as an appetizer or side dish, these fritters are sure to become a family favorite!

Ingredients

Scale
  • 2 cups mashed potatoes (preferably cold)

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 1 cup shredded cheddar cheese

  • 1/2 cup all-purpose flour

  • 1 large egg, beaten

  • 1/4 cup green onions, chopped (optional)

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • Vegetable oil for frying

Instructions

  1. In a large mixing bowl, combine the mashed potatoes, corn kernels, shredded cheddar cheese, flour, beaten egg, green onions, garlic powder, paprika, salt, and pepper. Stir until well combined.

  2. Scoop spoonfuls of the mixture and form into small patties, about 2 inches in diameter.

  3. Heat vegetable oil in a large skillet over medium-high heat.

  4. Once the oil is hot, carefully place the fritters in the pan, frying in batches if needed. Cook for 3-4 minutes per side, or until golden brown and crispy.

  5. Remove the fritters from the skillet and drain on a paper towel-lined plate.

  6. Serve warm with your favorite dipping sauce.

Notes

  • Make sure the mashed potatoes are cooled before mixing to avoid a mushy texture.

  • You can substitute the cheddar cheese with other types like mozzarella or pepper jack for a different flavor.

  • If the fritter mixture is too wet, add a little more flour to help bind it together.

  • These fritters are great with sour cream, ranch, or spicy mayo for dipping.
