Description

Indulge in the crispy, cheesy goodness of homemade cheese potato croquettes. These delightful bites are perfect as an appetizer or a comforting snack, combining creamy potatoes with rich cheddar and Parmesan, all encased in a crispy coating.


Ingredients

  • 2 pounds (900g) potatoes, peeled and cut into chunks
  • 1/2 cup (120ml) milk
  • 1/4 cup (57g) butter, melted
  • 1/4 cup (25g) all-purpose flour
  • 1/2 cup (60g) grated cheddar cheese
  • 1/4 cup (60g) grated Parmesan cheese
  • 1 egg, beaten
  • 1 cup (120g) bread crumbs
  • Vegetable oil, for frying

Instructions

  • Boil the Potatoes: Place the potato chunks in a large pot of cold water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
  • Mash the Potatoes: Drain the potatoes and return them to the pot. Mash them until smooth.
  • Add Milk and Butter: Stir in the milk and melted butter until well combined.
  • Stir in Flour and Cheese: Gradually add the flour, stirring constantly. Mix in the cheddar cheese and Parmesan cheese.
  • Cool the Mixture: Allow the potato mixture to cool completely in the refrigerator for at least 30 minutes.
  • Shape the Croquettes: Form the cooled potato mixture into 12-15 croquettes.
  • Bread the Croquettes: Dip each croquette into the beaten egg, then roll it in the bread crumbs to coat.
  • Fry the Croquettes: Heat vegetable oil in a large skillet to 350°F (175°C). Carefully place the croquettes in the hot oil and fry until golden brown on all sides, about 3-4 minutes.
  • Drain and Serve: Drain the croquettes on paper towels and serve hot with your favorite dipping sauce.
