Instructions
- In a small bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in the crushed cookies and set aside.
- Unroll the croissant dough and separate into triangles. Spoon about a tablespoon of the cheesecake filling onto the center of each triangle, then fold or roll the dough over the filling, sealing the edges as best as possible.
- Preheat your waffle iron and lightly grease it with butter or cooking spray.
- Place each filled dough piece into the waffle iron and cook for 3–5 minutes, or until golden brown and crispy.
- Carefully remove the croffles and let them cool slightly. Top with powdered sugar, extra crushed cookies, or your favorite drizzle!
