  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar (or to taste)
  • 1/2 tsp vanilla extract
  • 1/4 cup crushed cookies (e.g., Oreos or graham crackers)
  • Butter or cooking spray (for waffle iron)
  • Optional toppings: powdered sugar, extra crushed cookies, melted chocolate, or fresh berries

Instructions

  1. In a small bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in the crushed cookies and set aside.
  2. Unroll the croissant dough and separate into triangles. Spoon about a tablespoon of the cheesecake filling onto the center of each triangle, then fold or roll the dough over the filling, sealing the edges as best as possible.
  3. Preheat your waffle iron and lightly grease it with butter or cooking spray.
  4. Place each filled dough piece into the waffle iron and cook for 3–5 minutes, or until golden brown and crispy.
  5. Carefully remove the croffles and let them cool slightly. Top with powdered sugar, extra crushed cookies, or your favorite drizzle!
