  • 1 1/2 cups shredded cheddar cheese
  • 1 1/2 cups shredded Monterey Jack cheese
  • 4 flour tortillas (8-inch)
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Prepare the Chicken:
    In a skillet, heat olive oil over medium heat. Add the shredded chicken and season with garlic powder, onion powder, chili powder, cumin, salt, and pepper. Stir to coat the chicken with the spices, and cook for 2-3 minutes until heated through. Set aside.
  2. Assemble the Quesadillas:
    Lay out the flour tortillas on a flat surface. On one half of each tortilla, sprinkle a generous amount of shredded cheddar cheese and Monterey Jack cheese. Top with a few spoonfuls of the seasoned chicken.
  3. Cook the Quesadillas:
    Heat a large skillet or griddle over medium heat. Brush one side of each tortilla with melted butter. Place the buttered side down in the skillet. Cook for about 2-3 minutes, or until the tortilla is golden and crispy. Flip the quesadilla carefully and cook for another 2-3 minutes on the other side, or until the cheese is fully melted and the tortilla is crispy.
  4. Serve:
    Remove the quesadilla from the skillet and cut it into wedges. Serve immediately with your favorite toppings such as sour cream, salsa, guacamole, or a sprinkle of cilantro.
