Description

This Crispy Cheesy Chicken is a golden, crunchy, and cheesy delight thatโ€™s perfect for dinner or as a party appetizer. The juicy chicken is coated in a crispy, flavorful breadcrumb mixture, then topped with melted cheese for the ultimate comfort food.   • 4 boneless, skinless Chicken breasts
  • 1 cup Panko breadcrumbs
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Paprika
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 egg, beaten
  • 1/2 cup All-purpose flour
  • 1 cup Mozzarella cheese, shredded
  • 2 tbsp Olive oil (for frying)
  • 1 tbsp Fresh parsley, chopped (for garnish, optional)


Instructions

  1. Preheat the oven to 375ยฐF (190ยฐC) and lightly grease a baking sheet or line it with parchment paper.
  2. Set up a breading station: In one shallow bowl, place the flour. In another bowl, beat the egg. In a third bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  3. Coat each chicken breast first in the flour, then dip it in the beaten egg, and finally coat it with the breadcrumb mixture. Press the breadcrumbs into the chicken to ensure they stick.
  4. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 3-4 minutes per side, until golden and crispy. The chicken doesnโ€™t need to be fully cooked through at this point as it will finish cooking in the oven.
  5. Place the browned chicken breasts onto the prepared baking sheet. Top each chicken breast with a generous amount of shredded mozzarella cheese.
  6. Bake in the preheated oven for 15-20 minutes, or until the chicken is fully cooked (internal temperature should reach 165ยฐF/74ยฐC) and the cheese is melted and bubbly.
  7. Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley and serve immediately.

Notes

  • If you prefer a spicier version, you can add red pepper flakes to the breadcrumb mixture.
  • You can use any cheese you like for the topping, such as cheddar or gouda, for a different flavor profile.
  • This recipe can be easily doubled or halved depending on the number of servings you need.
  • For a lighter version, you can bake the chicken without pan-frying it, although the texture will be less crispy.
