Instructions
- Place the grated sweet potatoes in a clean kitchen towel and squeeze out as much moisture as possible.
- In a large bowl, combine the grated sweet potatoes, cheddar cheese, Parmesan, green onions, beaten egg, garlic powder, smoked paprika, salt, and pepper. Mix well.
- Heat olive oil in a large skillet over medium heat.
- Using a spoon, scoop small portions of the mixture and form into bite-sized patties.
- Place the patties in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite dipping sauce.
