Ingredients
Scale
For the Crispy Chicken:
- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 large eggs, beaten
- 1 cup breadcrumbs (preferably panko)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil (for frying)
For the Alfredo Sauce:
- 1 tablespoon unsalted butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 1/2 cups grated Parmesan cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- Fresh parsley (optional, for garnish)
For the Pasta:
- 12 oz fettuccine or your preferred pasta
- Salt, for the pasta water
Instructions
- Cook the pasta:
Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to the package directions until al dente, then drain and set aside, reserving 1 cup of pasta water. - Prepare the crispy chicken:
Season the chicken breasts with salt and pepper. In one shallow bowl, combine the flour, garlic powder, onion powder, paprika, salt, and pepper. In a second bowl, place the beaten eggs. In a third bowl, mix the breadcrumbs and Parmesan cheese.Dredge each chicken breast in the flour mixture, then dip in the egg, and coat thoroughly in the breadcrumb mixture. Press down gently to ensure the coating sticks.
- Fry the chicken:
Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and crispy. Remove the chicken from the skillet and let it rest on a paper towel-lined plate. - Make the Alfredo sauce:
In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese, garlic powder, salt, and pepper. Cook for 3-4 minutes, or until the sauce thickens. - Combine the pasta and sauce:
Add the drained pasta to the Alfredo sauce, tossing to coat evenly. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency. - Assemble the dish:
Slice the crispy chicken into strips and place on top of the creamy Alfredo pasta. Garnish with fresh parsley and extra Parmesan cheese, if desired. Serve immediately.
Notes
- You can substitute chicken breasts with chicken thighs for a juicier result.
- For a lighter version, you can use half-and-half or milk in place of the heavy cream and reduce the amount of Parmesan cheese.
- For an added kick, sprinkle some red pepper flakes on top before serving.
