Description

These Crispy Chicken Parmesan Rolls are a delicious twist on the classic Chicken Parmesan! Tender chicken breasts are rolled up with marinara sauce and mozzarella cheese, breaded and baked to crispy perfection. Topped with more marinara sauce and Parmesan cheese, they’re the ultimate comfort food with a crispy exterior and gooey, cheesy inside.   • 4 boneless, skinless chicken breasts
  • 1 cup marinara sauce (store-bought or homemade)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh basil leaves, chopped (optional, for garnish)
  • Olive oil spray or 2 tablespoons olive oil (for baking)

Instructions

  1. Prepare the Chicken:
    • Preheat the oven to 400°F (200°C).
    • Lay each chicken breast flat on a cutting board. Use a sharp knife to slice horizontally through the middle, creating a pocket (do not slice all the way through, just enough to make a cavity).
    • Season both sides of the chicken with salt, pepper, garlic powder, onion powder, and oregano.
  2. Fill the Chicken:
    • Spoon 1-2 tablespoons of marinara sauce into each chicken breast pocket.
    • Stuff the chicken with 2-3 tablespoons of shredded mozzarella cheese (and some fresh basil, if desired). Close the chicken breasts, securing the filling inside. You can use toothpicks to seal the edges if needed.
  3. Bread the Chicken:
    • In one shallow bowl, place the flour.
    • In a second bowl, whisk the eggs.
    • In a third bowl, mix the panko breadcrumbs with grated Parmesan cheese, and season with a pinch of salt and pepper.
    • Dredge each stuffed chicken breast first in the flour, then dip it into the egg, and finally coat it in the breadcrumb mixture, pressing gently to adhere.
  4. Bake the Chicken:
    • Place the breaded chicken breasts on a baking sheet lined with parchment paper or lightly greased with olive oil.
    • Lightly spray the tops of the chicken with olive oil or drizzle with 1-2 tablespoons of olive oil to help them crisp up in the oven.
    • Bake in the preheated oven for 25-30 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C).
  5. Finish with Marinara and Cheese:
    • In the last 5 minutes of baking, spoon some marinara sauce over each chicken roll and top with extra mozzarella cheese.
    • Return to the oven and bake until the cheese is melted and bubbly, about 5 minutes.
  6. Serve:
    • Remove the toothpicks (if used) and serve the crispy chicken Parmesan rolls hot.
    • Garnish with freshly chopped basil and extra grated Parmesan cheese.
