- 10–12 corn tortillas
- 4 ounces cream cheese, softened
- 1 can (15 ounces) black beans, drained and rinsed
- 2 tablespoons jarred diced jalapeños
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/5 teaspoon salt
- 1 chipotle pepper in adobo plus 1/2 teaspoon adobo sauce
- Avocado oil, as needed
- Guacamole, salsa, sour cream, or queso for dipping
Instructions
- Make the filling: In a medium bowl, combine cream cheese, black beans, jalapeños, cumin, garlic powder, salt, chipotle pepper, and adobo sauce.
- Warm tortillas: Wrap corn tortillas in a damp paper towel and microwave on high for 30 seconds, or until warm and pliable.
- Fill tortillas: Add 2 tablespoons of filling to each tortilla, shaping into a log. Roll up tightly, seam side down. Place on a plate or baking sheet.
- Fry taquitos: Heat avocado oil in a high-sided frying pan over medium-high heat. Carefully place 4 taquitos in the oil, seam side down, and cook for 2-3 minutes per side. Remove and drain on paper towels. Repeat with remaining taquitos.
- Serve: Serve immediately with your favorite dips.
Notes
Adjust the spice level by adding more or fewer jalapeños and chipotle peppers.
