Instructions
- In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, black pepper, and garlic powder (if using). Stir until the dry ingredients are well combined.
- Slowly pour in the cold sparkling water (or beer), whisking continuously until the batter is smooth. The batter should be thick enough to coat the back of a spoon but still pourable. If the batter is too thick, you can add a little more water to thin it out.
- If using, stir in the olive oil for extra crispiness.
- Heat vegetable oil in a deep fryer or large pot over medium-high heat to 350°F (175°C). You want enough oil to fully submerge the fish fillets for frying.
- Dip each fish fillet into the batter, ensuring it is completely coated, and carefully lower it into the hot oil. Fry the fish for 4-6 minutes or until golden brown and crispy, turning once to ensure even cooking.
