Ingredients
Scale
- 1 lb shrimp (16–20 count, peeled and cleaned)
- 1/4 cup buttermilk or regular milk (for egg wash)
- 2 large eggs (beaten for egg wash)
- 2 cups seasoned bread crumbs
- Corn oil (or vegetable oil for frying)
Instructions
- Prepare the Shrimp:
- Peel and clean the shrimp, rinsing them under cold running water.
- If desired, butterfly the shrimp by cutting through the flesh to open them up without fully cutting through.
- Make the Egg Wash:
- In a bowl, mix together the eggs and buttermilk to create the egg wash.
- Coat the Shrimp:
- Dip the cleaned shrimp into the egg wash, ensuring they are fully covered. Let any excess egg wash drip off.
- Coat the shrimp in seasoned bread crumbs, lightly pressing to ensure an even coating.
- Fry the Shrimp:
- Preheat oil in a fryer or deep pan to 350-375°F.
- Fry the shrimp for 2-4 minutes, or until golden brown.
- Remove the shrimp and let them drain on a rack or paper towels to remove excess oil.
- Serve:
- Serve with cocktail sauce or tartar sauce for dipping.
Notes
- Adjust the seasoning in the breadcrumbs to your taste.
- For extra crunch, consider double-coating the shrimp by repeating the egg wash and breadcrumb steps.
