Description

Deliciously crispy on the outside and tender on the inside, these herb-roasted baby potatoes are seasoned with aromatic herbs and spices, making them the perfect side dish for any meal.


Ingredients

  • 1.5 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  • Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Toss Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, rosemary, thyme, oregano, garlic powder, onion powder, salt, and pepper.
  • Roast: Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are golden brown and crispy on the outside while tender inside. Toss halfway through for even cooking.
  • Serve: Remove from the oven and garnish with fresh parsley before serving.

Notes

For extra crispiness, soak the halved potatoes in water for 30 minutes before roasting and dry them thoroughly.
