- 3 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, rosemary, thyme, oregano, garlic powder, onion powder, salt, and pepper.
- Roast: Spread the seasoned potatoes in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are golden brown and crispy on the outside while tender inside. Toss halfway through for even cooking.
- Serve: Remove from the oven and garnish with fresh parsley before serving.
Notes
For extra crispiness, soak the halved potatoes in water for 30 minutes before roasting and dry them thoroughly.
