- 3 cups cooked chicken, shredded
- 1 cup mayonnaise
- 1 cup sour cream
- 1 package (10 oz) frozen mixed vegetables, thawed
- 1 cup shredded cheddar cheese
- 1/2 cup chopped celery
- 1/4 cup chopped onion
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 1/2 cups crushed crispy fried onions (like French’s)
- 2 tablespoons melted butter
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch casserole dish.
- In a large bowl, combine shredded chicken, mayonnaise, sour cream, thawed mixed vegetables, cheddar cheese, celery, onion, garlic powder, salt, and pepper. Mix well.
- Transfer the mixture to the prepared casserole dish and spread evenly.
- In a small bowl, mix crushed crispy fried onions with melted butter.
- Sprinkle the onion mixture evenly over the top of the casserole.
- Bake uncovered for 30-35 minutes until the top is golden brown and casserole is heated through.
- Let cool slightly before serving.
Notes
- Use rotisserie chicken for quick prep.
- Add diced bell peppers or mushrooms for extra veggies.
- Can be prepared a day ahead and baked before serving.
