These Crispy Parmesan Garlic Potato Balls are the perfect combination of crispy on the outside, fluffy on the inside! - 1/3 cup + 1/4 cup grated Parmesan cheese
- 1 tsp garlic granules

- 1/2 tsp black pepper
- 3 tbsp fresh parsley, finely chopped
- Cooking oil, for frying
Instructions
- Cook the Potatoes:
Boil the quartered potatoes in salted water until tender, about 12–15 minutes. Drain and let the potatoes steam dry for 5–8 minutes to remove excess moisture. - Mash the Potatoes:
In a large bowl, mash the potatoes until smooth. Add the cornstarch (or flour), 1/3 cup Parmesan, garlic granules, salt, and black pepper. Mix thoroughly until combined. - Shape the Potato Balls:
Using your hands, shape the mixture into bite-sized balls. Wet your hands with water to prevent the potatoes from sticking. - Heat the Oil:
In a frying pan, heat enough cooking oil to cover the potato balls (about 2 inches deep) to 350°F (175°C). - Fry the Potato Balls:
Fry the potato balls in small batches, ensuring not to overcrowd the pan. Cook for 5–7 minutes per batch or until golden brown and crispy. - Drain and Toss:
Use a slotted spoon to remove the balls and transfer them to a wire rack to drain excess oil. While still warm, toss the fried potato balls with the remaining 1/4 cup Parmesan, chopped parsley, and a pinch of salt to taste. - Serve:
Serve immediately with spicy mayo or your favorite dipping sauce.

- Consistency Tip: If the mixture is too wet to form into balls, add a bit more cornstarch or flour.
