    • Fresh parsley, chopped (for garnish)
  • For the Dipping Sauce:
    • 1/2 cup mayonnaise
    • 1 tbsp ketchup
    • 1 tsp smoked paprika
    • 1 tsp garlic powder
    • 1 tsp lemon juice

Instructions

  • Prepare the Potatoes:
    • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • In a large bowl, toss the potato wedges with olive oil until evenly coated.
    • In a separate small bowl, mix Parmesan cheese, garlic powder, paprika, oregano, salt, and pepper.
    • Coat the potato wedges with the Parmesan mixture and arrange them in a single layer on the baking sheet.
  • Bake the Potatoes:
    • Bake for 35-40 minutes, turning halfway through, until golden brown and crispy on the edges.
  • Make the Dipping Sauce:
    • In a small bowl, mix mayonnaise, ketchup, smoked paprika, garlic powder, and lemon juice until smooth. Adjust seasoning to taste.
  • Serve:
    • Garnish the crispy potato wedges with freshly chopped parsley and serve with the dipping sauce on the side. Enjoy!

Notes
