Description

These Crispy Parmesan Zucchini Rounds are a delicious and healthier alternative to traditional fried snacks. Coated in a savory mixture of Parmesan cheese, breadcrumbs, and herbs, then baked to crispy perfection, these zucchini rounds make a perfect appetizer, side dish, or snack. They’re simple to make, full of flavor, and will satisfy your craving for something crunchy and savory!

Ingredients

Scale
  • 2 medium zucchinis, sliced into ¼-inch rounds

  • ½ cup grated Parmesan cheese

  • ½ cup breadcrumbs (preferably panko for extra crunch)

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 large egg, beaten

  • 1 tbsp olive oil (optional, for drizzling)

Instructions

  1. Preheat the oven:

    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

  2. Prepare the coating:

    • In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, dried oregano, salt, and black pepper. Mix well to combine.

  3. Coat the zucchini rounds:

    • Dip each zucchini round into the beaten egg, making sure it’s fully coated. Then, dredge the zucchini in the Parmesan breadcrumb mixture, pressing lightly to ensure it sticks. Place the coated zucchini rounds on the prepared baking sheet.

  4. Bake the zucchini rounds:

    • Arrange the zucchini rounds in a single layer on the baking sheet, leaving a little space between each round. If desired, lightly drizzle the rounds with olive oil for extra crispiness.

    • Bake for 20-25 minutes, flipping halfway through, until the zucchini rounds are golden brown and crispy on the edges.

  5. Serve:

    • Remove from the oven and let cool slightly before serving. These zucchini rounds are delicious on their own or served with a side of marinara sauce for dipping.

Notes

  • For a gluten-free version, use gluten-free breadcrumbs or almond flour instead of regular breadcrumbs.

  • You can add extra seasonings like Italian seasoning or red pepper flakes to the coating for additional flavor.

  • These zucchini rounds can be stored in an airtight container in the fridge for up to 2 days, but they’re best enjoyed fresh for maximum crispiness.
