  • 4 medium potatoes, peeled and cubed
  • 2 tbsp unsalted butter
  • 1/2 cup whole milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup all-purpose flour
  • 2 cups cooked chicken, shredded
  • 1/4 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley
  • 1 large egg, beaten
  • 2 cups breadcrumbs (preferably panko)
  • Vegetable oil for frying

Instructions

  1. Boil the cubed potatoes in salted water for about 10–15 minutes or until tender. Drain and return to the pot.
  2. Add butter, milk, salt, and pepper to the potatoes, then mash until smooth. Let the mashed potatoes cool to room temperature.
  3. While the potatoes cool, prepare the filling. In a bowl, combine the shredded chicken, cream cheese, Parmesan, and chopped parsley. Mix well until smooth and creamy. Season with salt and pepper to taste.
  4. Once the mashed potatoes have cooled, take a small amount of the potato mixture (about 1 tablespoon) and flatten it in the palm of your hand. Place a teaspoon of the chicken mixture in the center and mold the potato around it to form a ball or oval shape. Repeat with the remaining mixture.
  5. Dip each croquette in the beaten egg, then roll in breadcrumbs, ensuring they are fully coated.
  6. Heat vegetable oil in a deep skillet or pot over medium-high heat. Once the oil reaches 350°F (175°C), carefully fry the croquettes in batches for 3–4 minutes, or until golden and crispy on all sides. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain.
  7. Serve hot as an appetizer or snack with a dipping sauce of your choice (like ranch or spicy mayo). Enjoy!

Notes

  • For a twist, you can add cooked vegetables like peas or carrots to the chicken filling.
  • These croquettes can be made ahead of time and frozen. To cook from frozen, simply fry them for a few extra minutes until heated through and crispy.
