- 1 clove garlic, minced (optional)
For the Topping:
- 4 oz smoked salmon, sliced
- 1/2 cup crème fraîche
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh chives, chopped
- Lemon wedges, for serving
- Fresh cracked black pepper, to taste
Instructions
- Prepare the Potatoes:
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the thinly sliced potatoes with melted butter, olive oil, salt, pepper, and thyme (if using). Ensure the potatoes are well-coated.
- Assemble the Galette:
- Heat a large, oven-safe skillet over medium heat and add a little olive oil.
- Layer the potatoes in a circular pattern, starting from the outer edge of the pan and working inward, slightly overlapping each slice to form a spiral. You can layer them in multiple circles if necessary.
- Sprinkle the minced garlic (if using) over the top of the potatoes.
- Once all the potatoes are in the pan, gently press them down with a spatula to compact them and create an even layer.
- Cook on the stovetop for about 5-7 minutes until the bottom is golden and crispy.
- Bake the Galette:
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the potatoes are tender and golden brown and crispy on the edges.
- Remove from the oven and allow to cool slightly.
- Assemble the Dish:
- Once the galette has cooled slightly, carefully slide it onto a serving platter.
- Spread the crème fraîche evenly over the top of the galette.
- Arrange the smoked salmon slices on top of the crème fraîche.
- Sprinkle with fresh dill, chives, and additional black pepper.
