Description

Seasoned Turkey:

  • 1 pound ground turkey
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon red pepper flakes

Hash:

  • 34 tablespoons cooking oil
  • 1 pound starchy potatoes, cut into 1/2-inch pieces
  • 1 teaspoon salt
  • 3 medium leeks, thinly sliced
  • Fresh parsley (optional, for garnishing)

Instructions

  • Season turkey: In a bowl, combine ground turkey with dried herbs and spices. Mix until combined.
  • Parboil potatoes: In a small pot, boil potatoes in salted water until mostly cooked but not tender. Drain and rinse with cold water.
  • Dry potatoes: Place drained potatoes back in the pot (off the heat) for a few minutes to dry.
  • Cook potatoes: Heat oil in a large skillet over medium-high heat. Add parboiled potatoes and cook for 5-7 minutes per side, or until golden brown. Remove potatoes and set aside.
  • Sauté leeks: Wipe down skillet. Add more oil and sauté leeks for 8-10 minutes, covered.
  • Cook turkey: Add seasoned turkey to the skillet and break it up. Cook for 7-10 minutes, or until cooked through.
  • Combine: Return potatoes to the skillet and cook for a few more minutes.
  • Season and serve: Taste and season with salt and pepper. Serve immediately.

Notes

For extra flavor, add a pinch of grated nutmeg or ground cumin to the seasoned turkey.
