Description

Crispy Reuben Balls are a savory, bite-sized snack that brings all the flavors of a classic Reuben sandwich in a crunchy, golden coating. With tender corned beef, melted Swiss cheese, and tangy sauerkraut, these balls are perfect for parties, appetizers, or snacking. Theyโ€™re quick to make and sure to impress everyone at your next gathering!

Ingredients

Scale
  • 2 cups cooked corned beef, shredded
  • 1 cup sauerkraut, drained and chopped
  • 1 cup Swiss cheese, shredded
  • 1/2 cup cream cheese, softened
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Oil for frying (vegetable or canola oil)

Instructions

  • Mix the Filling
In a large bowl, combine the shredded corned beef, chopped sauerkraut, shredded Swiss cheese, softened cream cheese, Dijon mustard, garlic powder, onion powder, and black pepper. Stir until everything is well mixed.
  • Roll Into Balls
Using your hands, form the mixture into small balls, about 1 inch in diameter. Place the balls on a parchment-lined baking sheet.
  • Set Up the Breading Station
In three separate shallow dishes, prepare the breading materials: one with flour, one with the beaten eggs, and one with breadcrumbs.
  • Bread the Balls
Roll each ball in the flour first, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Press lightly to ensure an even coating.
  • Fry Until Golden
Heat the oil in a deep skillet or fryer over medium heat. Once hot, fry the Reuben balls in batches, turning occasionally, until they are golden brown and crispy (about 3-4 minutes per side).
  • Serve and Enjoy
Drain the Reuben balls on paper towels and serve warm with Dijon mustard or your favorite dipping sauce.

Notes

  • Use Lean Corned Beef: For a healthier version, choose lean corned beef to reduce the fat content.
  • Chill Before Frying: If the mixture is too soft, chill the balls for 30 minutes before frying to help them keep their shape.
  • Use a Fry Thermometer: To ensure the oil is at the right temperature, use a fry thermometer to maintain the heat at around 350ยฐF.
  • Dipping Sauce: Serve these crispy Reuben balls with a tangy Dijon mustard or creamy Thousand Island dressing for an extra burst of flavor.
  • Freeze for Later: These Reuben balls freeze well. After frying, let them cool completely, then freeze in an airtight container for up to 1 month. Reheat in the oven for a crispy finish.
