Description

Crispy Reuben Balls are a savory, bite-sized snack that brings all the flavors of a classic Reuben sandwich in a crunchy, golden coating. With tender corned beef, melted Swiss cheese, and tangy sauerkraut, these balls are perfect for parties, appetizers, or snacking. They’re quick to make and sure to impress everyone at your next gathering!

Ingredients

Scale
  • 2 cups cooked corned beef, shredded
  • 1 cup sauerkraut, drained and chopped
  • 1 cup Swiss cheese, shredded
  • 1/2 cup cream cheese, softened
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 cup breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Oil for frying (vegetable or canola oil)

Instructions

  • Mix the Filling
In a large bowl, combine the shredded corned beef, chopped sauerkraut, shredded Swiss cheese, softened cream cheese, Dijon mustard, garlic powder, onion powder, and black pepper. Stir until everything is well mixed.
  • Roll Into Balls
Using your hands, form the mixture into small balls, about 1 inch in diameter. Place the balls on a parchment-lined baking sheet.
  • Set Up the Breading Station
In three separate shallow dishes, prepare the breading materials: one with flour, one with the beaten eggs, and one with breadcrumbs.
  • Bread the Balls
Roll each ball in the flour first, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Press lightly to ensure an even coating.
  • Fry Until Golden
Heat the oil in a deep skillet or fryer over medium heat. Once hot, fry the Reuben balls in batches, turning occasionally, until they are golden brown and crispy (about 3-4 minutes per side).
  • Serve and Enjoy
Drain the Reuben balls on paper towels and serve warm with Dijon mustard or your favorite dipping sauce.

Notes

  • Use Lean Corned Beef: For a healthier version, choose lean corned beef to reduce the fat content.
  • Chill Before Frying: If the mixture is too soft, chill the balls for 30 minutes before frying to help them keep their shape.
  • Use a Fry Thermometer: To ensure the oil is at the right temperature, use a fry thermometer to maintain the heat at around 350°F.
  • Dipping Sauce: Serve these crispy Reuben balls with a tangy Dijon mustard or creamy Thousand Island dressing for an extra burst of flavor.
  • Freeze for Later: These Reuben balls freeze well. After frying, let them cool completely, then freeze in an airtight container for up to 1 month. Reheat in the oven for a crispy finish.
