Deliciously crispy rice dumplings filled with a savory mixture of tofu, vegetables, and rice, served with a sweet and tangy dipping sauce. These dumplings are easy to make and perfect for a snack or appetizer!

For the Dumplings:
- 30 dumpling wrappers
- 3 oz tofu, cut into tiny cubes
- 1 small carrot (about 3 tablespoons chopped)
- ¾ cup chopped broccoli stem
- 3 tablespoons frozen corn
- 3 cups cooked rice
- 1 tablespoon soy sauce
- 1 teaspoon toasted sesame oil
- ⅛ teaspoon ground pepper
- ½ teaspoon sugar
- ¼ teaspoon salt (plus more to taste)
- 1 tablespoon toasted sesame seeds
- Oil for cooking
For the Sauce:
- 3 tablespoons Thai sweet chili sauce
- Juice of ¼ lime
- A handful of chopped cilantro
Instructions
- Prepare the Filling:
- Heat a non-stick skillet over medium heat and add ½ tablespoon of oil.
- Sauté the carrot and tofu until the tofu turns golden brown.
- Add the chopped broccoli stem and frozen corn, stir-frying for another 30 seconds (or longer for softer broccoli).
- Season with salt, sugar, and ground pepper.
- Reduce heat to low and add the cooked rice, soy sauce, and toasted sesame oil. Toss until well combined. Taste and adjust seasoning. Set aside to cool.
- Prepare the Sauce:
- In a small bowl, whisk together the Thai sweet chili sauce and lime juice. Garnish with chopped cilantro.
- Make and Cook the Dumplings:
- Roll out 3 dumpling wrappers to 5″-6″ in diameter. Cover them with a cloth to prevent drying.
- Fill a small bowl with water and another with oil.
- Dab the edges of a wrapper with water. Place a heaping spoonful of filling in the center.
- Fold the bottom of the wrapper up over the filling, then fold the sides to the middle and roll to seal.
- Heat oil in a non-stick skillet over medium heat. Cook dumplings seam side down until golden and crispy, about 2-3 minutes per side.
- Serve:
- Serve hot with the prepared sauce on the side.
