This dish is sure to be a hit with its crispy exterior, cheesy interior, and comforting sauce. Perfect for busy weeknights or as a delicious weekend meal, it’s a family favorite that can be made in under an hour.

Ingredients

Scale

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 sleeve Ritz crackers, crushed (Roasted Vegetable flavor recommended)
  • 1/4 cup milk
  • 1 large egg
  • 2 cups shredded cheddar cheese
  • Salt, to taste
  • Garlic pepper, to taste

For the Sauce:

  • 1 can (10 oz) cream of chicken soup
  • 1/4 cup milk
  • 2 tablespoons sour cream
  • 2 tablespoons butter

Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C). Lightly spray a baking pan with nonstick cooking spray to prevent the chicken from sticking during baking.
  • Prepare the Chicken: In a shallow dish, whisk together the egg and 1/4 cup of milk. In another shallow dish, place the crushed Ritz crackers. In a third dish, place the shredded cheddar cheese. Season the chicken breasts with salt and garlic pepper to taste.
  • Coat the Chicken: Dip each chicken breast into the egg and milk mixture, ensuring it’s fully coated. Next, press the shredded cheese onto the chicken, and finally coat it with the crushed Ritz crackers, pressing gently to ensure the coating sticks.
  • Bake the Chicken: Place the coated chicken breasts onto the prepared baking pan and bake for 30 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 75°C) and the coating is golden and crispy.
  • Prepare the Sauce: While the chicken is baking, prepare the sauce. In a small saucepan over medium heat, melt the butter. Add the cream of chicken soup, sour cream, and 1/4 cup milk. Whisk until the mixture is well combined and heated through. Keep warm until ready to serve.
  • Serve: Once the chicken is fully cooked, remove it from the oven and serve hot with the creamy sauce poured over the top.

Notes

  • Make it Spicy: If you like a little heat, you can add a pinch of cayenne pepper or red pepper flakes to the Ritz cracker mixture or the sauce.
  • Cheese Variations: Feel free to substitute the cheddar cheese with mozzarella, Monterey Jack, or your favorite cheese for a different flavor.
  • Dipping Option: For a fun twist, serve the chicken with extra dipping sauce on the side.
  • Low-Sodium Option: Use a low-sodium cream of chicken soup and reduced-sodium Ritz crackers to make the dish lower in sodium.
  • Add Vegetables: Pair the chicken with a side of roasted or steamed vegetables like broccoli, carrots, or green beans for a well-rounded meal.
