Description

These Crispy Roast Potatoes are the perfect side dish for any meal! Golden and crispy on the outside with a soft, fluffy interior. Roasted to perfection with olive oil, garlic, and herbs, they are the ultimate comfort food that will steal the show at your next dinner.


Ingredients

  • 2 lbs (900g) baby potatoes or russet potatoes, peeled and cut into chunks
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried rosemary (or fresh, finely chopped)
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a large pot, bring the potatoes to a boil in salted water. Cook for about 10 minutes until slightly tender but not fully cooked.
  3. Drain the potatoes and let them sit for a few minutes to steam off excess moisture.
  4. Transfer the potatoes to a large bowl. Add olive oil, garlic, rosemary, thyme, salt, and pepper. Toss to coat the potatoes evenly.
  5. Spread the potatoes out on the prepared baking sheet in a single layer. Roast for 30–40 minutes, flipping halfway through, until the potatoes are golden and crispy on the outside.
  6. Remove from the oven and garnish with fresh parsley, if desired. Serve hot and enjoy!

Notes

  • For extra crispy potatoes, shake the pot with the potatoes in it before seasoning to rough up the edges.
  • If you prefer, use a mix of herbs such as oregano, basil, or sage for a different flavor profile.
  • Make sure to spread the potatoes out in a single layer to allow them to crisp up properly.
  • These potatoes can be prepped ahead by boiling and tossing in oil, then roasting when ready to serve.
