- 2 lbs (900g) baby potatoes or russet potatoes, peeled and cut into chunks
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried rosemary (or fresh, finely chopped)
- 1 tsp dried thyme
- Salt and pepper, to taste
- 1 tbsp fresh parsley, chopped (optional, for garnish)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large pot, bring the potatoes to a boil in salted water. Cook for about 10 minutes until slightly tender but not fully cooked.
- Drain the potatoes and let them sit for a few minutes to steam off excess moisture.
- Transfer the potatoes to a large bowl. Add olive oil, garlic, rosemary, thyme, salt, and pepper. Toss to coat the potatoes evenly.
- Spread the potatoes out on the prepared baking sheet in a single layer. Roast for 30–40 minutes, flipping halfway through, until the potatoes are golden and crispy on the outside.
- Remove from the oven and garnish with fresh parsley, if desired. Serve hot and enjoy!
Notes
- For extra crispy potatoes, shake the pot with the potatoes in it before seasoning to rough up the edges.
- If you prefer, use a mix of herbs such as oregano, basil, or sage for a different flavor profile.
- Make sure to spread the potatoes out in a single layer to allow them to crisp up properly.
- These potatoes can be prepped ahead by boiling and tossing in oil, then roasting when ready to serve.
