Ingredients
Scale
For the Chicken:
- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 large egg, beaten
- 1/2 cup panko breadcrumbs
- 2 tablespoons vegetable oil (for frying)
For the Peanut Sauce:
- 1/3 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon sesame oil
- 1 teaspoon grated ginger
- 1 garlic clove, minced
- 2 tablespoons warm water (to thin sauce)
For the Ramen:
- 2 packages ramen noodles (discard the seasoning packet)
- 1 cup shredded carrots
- 1/2 cup chopped green onions
- 1/4 cup chopped cilantro (for garnish)
- 1 tablespoon sesame seeds (optional, for garnish)
- Lime wedges (for serving)
Instructions
- Prepare the Chicken:
- Season the chicken breasts with salt, pepper, garlic powder, and paprika.
- Dredge the chicken in flour, dip it into the beaten egg, and then coat it in panko breadcrumbs, pressing down to make sure it sticks.
- Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown and crispy. Remove from the pan and set aside to rest for a few minutes, then slice into thin strips.
- Make the Peanut Sauce:
- In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, and minced garlic. Add warm water a little at a time until the sauce reaches a creamy, pourable consistency. Adjust the seasonings as needed to taste (add more honey for sweetness, more soy sauce for saltiness, or more vinegar for acidity).
- Cook the Ramen:
- Cook the ramen noodles according to the package instructions. Once cooked, drain the noodles and set aside.
- Assemble the Dish:
- In a large bowl, toss the cooked ramen noodles with the peanut sauce, shredded carrots, and chopped green onions until evenly coated.
- Divide the noodle mixture between bowls and top with the crispy chicken slices.
- Serve:
- Garnish with fresh cilantro, sesame seeds (if using), and lime wedges. Serve immediately and enjoy!
Notes
- For extra crunch, you can add chopped peanuts or fried shallots as a garnish.
- You can make the peanut sauce ahead of time and store it in the refrigerator for up to a week.
- If you prefer a vegetarian version, you can substitute the chicken with crispy tofu or tempeh.
