The perfect combination of crispy, savory, and creamy, this dish is a must-try for anyone who loves Thai-inspired cuisine!

Ingredients

Scale

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 large egg, beaten
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons vegetable oil (for frying)

For the Peanut Sauce:

  • 1/3 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 garlic clove, minced
  • 2 tablespoons warm water (to thin sauce)

For the Ramen:

  • 2 packages ramen noodles (discard the seasoning packet)
  • 1 cup shredded carrots
  • 1/2 cup chopped green onions
  • 1/4 cup chopped cilantro (for garnish)
  • 1 tablespoon sesame seeds (optional, for garnish)
  • Lime wedges (for serving)

Instructions

  1. Prepare the Chicken:
    • Season the chicken breasts with salt, pepper, garlic powder, and paprika.
    • Dredge the chicken in flour, dip it into the beaten egg, and then coat it in panko breadcrumbs, pressing down to make sure it sticks.
    • Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown and crispy. Remove from the pan and set aside to rest for a few minutes, then slice into thin strips.
  2. Make the Peanut Sauce:
    • In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, and minced garlic. Add warm water a little at a time until the sauce reaches a creamy, pourable consistency. Adjust the seasonings as needed to taste (add more honey for sweetness, more soy sauce for saltiness, or more vinegar for acidity).
  3. Cook the Ramen:
    • Cook the ramen noodles according to the package instructions. Once cooked, drain the noodles and set aside.
  4. Assemble the Dish:
    • In a large bowl, toss the cooked ramen noodles with the peanut sauce, shredded carrots, and chopped green onions until evenly coated.
    • Divide the noodle mixture between bowls and top with the crispy chicken slices.
  5. Serve:
    • Garnish with fresh cilantro, sesame seeds (if using), and lime wedges. Serve immediately and enjoy!

Notes

  • For extra crunch, you can add chopped peanuts or fried shallots as a garnish.
  • You can make the peanut sauce ahead of time and store it in the refrigerator for up to a week.
  • If you prefer a vegetarian version, you can substitute the chicken with crispy tofu or tempeh.
