Description
Crock Pot Carne Guisada is a slow-cooked, flavorful beef stew made with tender beef, bell peppers, onions, and tomatoes, all simmered in a savory gravy. This dish is perfect for a comforting dinner, served with rice, tortillas, or crusty bread.

- 2 lbs beef stew meat (chuck roast or sirloin), cut into bite-sized cubes
- 1 large onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1/2 cup beef broth
- 1/4 cup tomato paste
- 1 tbsp ground cumin
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp ground black pepper
- Salt to taste
- 1 tbsp olive oil (for searing)
- 2 tbsp cornstarch (optional, for thickening)
- Fresh cilantro, chopped (for garnish, optional)
- Rice, tortillas, or crusty bread (for serving)
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add the beef stew meat in batches and sear on all sides until browned. Transfer the seared meat to the Crock Pot.
- In the same skillet, add the chopped onion, bell pepper, and minced garlic. Sauté for 3–4 minutes until softened and fragrant. Transfer the vegetables to the Crock Pot with the meat.
- Add the diced tomatoes (with juice), beef broth, tomato paste, cumin, chili powder, paprika, oregano, black pepper, and salt to the Crock Pot. Stir to combine.
- Cover the Crock Pot and cook on low for 6–8 hours, or until the beef is tender and the flavors are well developed.
- If you prefer a thicker gravy, mix 2 tbsp of cornstarch with 2 tbsp of water to form a slurry. Stir the slurry into the Crock Pot about 30 minutes before serving and let it cook for another 30 minutes until thickened.
- Once the carne guisada is ready, garnish with fresh cilantro, if desired.
- Serve the carne guisada with rice, tortillas, or crusty bread for a complete meal.
Notes
- For an extra kick, you can add a chopped jalapeño or a dash of hot sauce to the Crock Pot.
- This dish can be made ahead of time and stored in the refrigerator for up to 3 days. The flavors improve as it sits!
- If you’d like a more traditional Tex-Mex flavor, you can substitute the beef broth with a can of beer or a combination of beer and broth.
