- 6 medium potatoes (Russet or Yukon Gold)
- 3 tbsp olive oil
- 2 tsp garlic powder
- 2 tsp dried rosemary (or fresh sprigs)
- 1 tsp salt
- 1/2 tsp black pepper
- Aluminum foil
Instructions
- Wash and dry the potatoes thoroughly.
- Prick each potato several times with a fork.
- In a small bowl, mix olive oil, garlic powder, rosemary, salt, and pepper.
- Rub each potato evenly with the seasoned olive oil mixture.
- Wrap each potato tightly in aluminum foil.
- Place wrapped potatoes in the crock pot in a single layer.
- Cook on low for 6–8 hours or on high for 3–4 hours, until potatoes are tender when pierced with a fork.
- Carefully unwrap and serve hot, optionally topped with sour cream, cheese, or chives.

- Use potatoes of similar size for even cooking.
- Fresh herbs can be substituted or added for extra flavor.
- Leftover potatoes can be refrigerated and reheated wrapped in foil.
