Description

Tender and flavorful potatoes cooked effortlessly in a crock pot, wrapped in foil to lock in moisture and seasonings. Perfect as a hearty side dish for any meal.


Ingredients

  • 6 medium potatoes (Russet or Yukon Gold)
  • 3 tbsp olive oil
  • 2 tsp garlic powder
  • 2 tsp dried rosemary (or fresh sprigs)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Aluminum foil

Instructions

  1. Wash and dry the potatoes thoroughly.
  2. Prick each potato several times with a fork.
  3. In a small bowl, mix olive oil, garlic powder, rosemary, salt, and pepper.
  4. Rub each potato evenly with the seasoned olive oil mixture.
  5. Wrap each potato tightly in aluminum foil.
  6. Place wrapped potatoes in the crock pot in a single layer.
  7. Cook on low for 6–8 hours or on high for 3–4 hours, until potatoes are tender when pierced with a fork.
  8. Carefully unwrap and serve hot, optionally topped with sour cream, cheese, or chives.
