Description

  • 2 cups shredded cheddar cheese
  • 1 cup shredded Mexican blend cheese
  • 12 soft flour tortillas (cut into strips)
  • 1/2 cup green onions, chopped (optional, for garnish)
  • 1/2 cup fresh cilantro, chopped (optional, for garnish)

Instructions

  1. In a skillet over medium heat, cook the ground beef (or chicken/turkey) until browned. Drain any excess fat.
  2. Add the taco seasoning mix and diced tomatoes with green chilies to the meat. Stir to combine and cook for 2-3 minutes, then remove from heat.
  3. In a slow cooker, add the cooked meat mixture, sour cream, salsa, and shredded cheddar and Mexican blend cheeses. Stir until well combined.
  4. Layer the tortilla strips on top of the mixture, then gently stir to coat the strips with the cheesy sauce.
  5. Cover and cook on low for 3-4 hours, or until the cheese is fully melted and the tortilla strips have softened.
  6. Once done, give it a good stir and serve. Garnish with chopped green onions and cilantro if desired.
