- 2 cups shredded cheddar cheese
- 1 cup shredded Mexican blend cheese
- 12 soft flour tortillas (cut into strips)
- 1/2 cup green onions, chopped (optional, for garnish)
- 1/2 cup fresh cilantro, chopped (optional, for garnish)
Instructions
- In a skillet over medium heat, cook the ground beef (or chicken/turkey) until browned. Drain any excess fat.
- Add the taco seasoning mix and diced tomatoes with green chilies to the meat. Stir to combine and cook for 2-3 minutes, then remove from heat.
- In a slow cooker, add the cooked meat mixture, sour cream, salsa, and shredded cheddar and Mexican blend cheeses. Stir until well combined.
- Layer the tortilla strips on top of the mixture, then gently stir to coat the strips with the cheesy sauce.
- Cover and cook on low for 3-4 hours, or until the cheese is fully melted and the tortilla strips have softened.
- Once done, give it a good stir and serve. Garnish with chopped green onions and cilantro if desired.
