Ingredients
Scale
- 1 (30 oz) bag frozen hash browns
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1/2 cup chopped green onions (optional)
- 1/2 cup melted butter
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese (optional, for topping)
Instructions
- In a large mixing bowl, combine the cream of chicken soup, sour cream, melted butter, garlic powder, salt, and black pepper. Stir until well combined.
- Add the frozen hash browns and shredded cheddar cheese to the mixture and stir until evenly coated.
- Transfer the mixture to a greased Crockpot (slow cooker), and spread it evenly in the pot.
- Cover and cook on low for 4 to 5 hours, or until the potatoes are tender and the cheese is melted and bubbly. Stir once or twice during cooking, if desired.
- If using, sprinkle grated Parmesan cheese and chopped green onions on top during the last 15-20 minutes of cooking to add extra flavor and a little crunch.
- Serve hot and enjoy this creamy, cheesy goodness!
Notes
- For a more savory kick, you can add crumbled bacon or cooked sausage to the mixture.
- For a spicier version, add a pinch of cayenne pepper or some diced jalapeños.
- Can be made ahead! Just prepare the mixture, cover it, and refrigerate overnight. Then, cook in the Crockpot the next day.
- If you prefer a crunchy topping, you can sprinkle crushed cornflakes or fried onions on top during the last 30 minutes of cooking.
