Description

Easy Crockpot Cheesy Ranch Beef Pasta Shells recipe made with tender ground beef, creamy ranch-infused sauce, and melty cheddar and mozzarella cheese. A hearty, one-pot family dinner ready in just over 5 hours.

Ingredients

Scale
  • 1 pound ground beef
  • 1 packet ranch seasoning mix
  • 1 can cream of mushroom soup
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 pound medium pasta shells
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat a large skillet over medium-high heat. Brown the ground beef, breaking it up with a spoon until fully cooked and golden brown. Drain excess fat. Season with salt and pepper to taste.
  2. Transfer the browned beef to a crockpot. Sprinkle ranch seasoning mix over the top, then add the cream of mushroom soup and beef broth. Stir until the mixture is smooth and well combined.
  3. Cover and cook on low heat for 4โ€“5 hours. Stir occasionally if possible to meld flavors together.
  4. About 30 minutes before serving, cook the pasta shells according to package directions until just shy of al dente. Drain well.
  5. Add the cooked pasta shells to the crockpot and gently fold into the beef mixture, ensuring even coating.
  6. Sprinkle the shredded cheddar and mozzarella cheeses over the top. Cover and cook for an additional 15โ€“20 minutes until the cheese is melted and creamy.
  7. Gently stir to incorporate melted cheese. Adjust seasoning with salt and pepper if needed. Garnish with fresh parsley before serving.

Notes

  • Use freshly shredded cheese for a smoother melt.
  • Pasta should be slightly undercooked before adding to crockpot to avoid overcooking.
  • Optional toppings include a drizzle of ranch dressing or a sprinkle of Parmesan cheese.
