Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 onion, sliced
  • 2 bell peppers (any color), sliced
  • 1 packet fajita seasoning mix (or use homemade seasoning)
  • 1 can (14 oz) diced tomatoes, drained
  • 1/4 cup chicken broth (or water)
  • 1 tbsp olive oil (optional)
  • Salt and pepper, to taste
  • 12 tbsp fresh lime juice (for serving)
  • Tortillas, for serving
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Place the chicken breasts or thighs in the bottom of the crockpot.
  2. Add the sliced onion and bell peppers over the chicken.
  3. Sprinkle the fajita seasoning over the chicken and vegetables.
  4. Pour the drained diced tomatoes and chicken broth over the top. Add a drizzle of olive oil, if using.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  6. Remove the chicken from the crockpot and shred it with two forks.
  7. Return the shredded chicken to the crockpot, stirring it into the vegetables and sauce.
  8. Add lime juice to taste and mix well.
  9. Serve the chicken fajitas in warm tortillas and garnish with fresh cilantro, if desired. Enjoy!

  • For a spicier version, you can add a chopped jalapeño or use a spicier fajita seasoning.
