Description

  • This Crockpot Chicken Stuffing is a simple, comforting dish that’s perfect for busy days or holiday dinners. Tender chicken is cooked in a flavorful stuffing mixture, resulting in a warm, satisfying meal that’s easy to prepare. With just a few ingredients and your trusty slow cooker, you can create a dish that’s rich in flavor and texture—ideal for both weeknight dinners and special occasions.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 box (6 oz) stuffing mix (such as Stove Top)

  • 1 can (10.5 oz) cream of chicken soup

  • 1/2 cup chicken broth

  • 1/2 cup sour cream

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1/2 teaspoon dried thyme (optional)

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Prepare the Chicken:

    • Place the chicken breasts (or thighs) at the bottom of the crockpot. Season with salt, pepper, onion powder, garlic powder, and thyme (if using).

  2. Make the Stuffing Mixture:

    • In a separate bowl, combine the cream of chicken soup, chicken broth, sour cream, and stuffing mix. Stir to combine. If you like a more moist stuffing, you can add a bit more chicken broth.

  3. Assemble in Crockpot:

    • Pour the stuffing mixture evenly over the chicken breasts in the crockpot.

  4. Cook:

    • Cover the crockpot and cook on low for 4-5 hours or until the chicken is fully cooked and tender. If you prefer a more golden and crispy topping, you can uncover the crockpot during the last 30 minutes of cooking.

  5. Shred the Chicken (optional):

    • Once the chicken is fully cooked, use two forks to shred the chicken directly in the crockpot. Mix the shredded chicken with the stuffing to create a combined dish.

  6. Serve:

    • Garnish with fresh chopped parsley, if desired. Serve hot as a delicious, hearty meal!

Notes

  • You can substitute the boneless, skinless chicken breasts with chicken thighs for a more flavorful and juicier result.

  • For extra flavor, add some sautéed onions, celery, or mushrooms to the stuffing mixture before adding it to the crockpot.

  • If you want a crispier topping, you can transfer the chicken and stuffing mixture to a baking dish and broil it for 2-3 minutes before serving.

  • This recipe can easily be doubled to feed a larger crowd; just be sure your crockpot is large enough.

  • Leftovers can be stored in the refrigerator for up to 3-4 days and reheated easily in the microwave.
