Description

This Crockpot Cowboy Soup is a hearty, comforting dish filled with ground beef, beans, corn, and plenty of flavorful spices. It’s easy to make and perfect for busy days when you want a filling, one-pot meal. Serve with cornbread or tortilla chips for a satisfying meal that the whole family will love!


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (4 oz) diced green chilies
  • 1 packet taco seasoning (or homemade seasoning)
  • 1 packet ranch seasoning mix
  • 1 1/2 cups beef broth (or chicken broth)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, green onions, tortilla chips

Instructions

  1. Cook the Ground Beef: In a skillet over medium heat, cook the ground beef with the chopped onion and minced garlic until the beef is browned and the onions are softened. Drain any excess grease.
  2. Add Ingredients to the Crockpot: Transfer the cooked beef mixture to your Crockpot. Add the kidney beans, black beans, corn, diced tomatoes, green chilies, taco seasoning, ranch seasoning, beef broth, cumin, chili powder, salt, and pepper. Stir everything together.
  3. Cook the Soup: Cover and cook on low for 6-7 hours or on high for 3-4 hours until the soup is hot and the flavors have melded together.
  4. Serve: Taste and adjust seasoning as needed. Serve the soup hot, topped with your favorite toppings like shredded cheese, sour cream, chopped green onions, and tortilla chips.

Notes

  • If you prefer a spicier soup, feel free to add a chopped jalapeño or some hot sauce.
  • You can make this soup ahead of time and store leftovers in the fridge for up to 3-4 days, or freeze for up to 3 months.
  • For a thicker soup, you can mash some of the beans before adding them to the Crockpot or blend a small portion of the soup and stir it back in.
