  • 1 can black beans, drained (optional)
  • 14 oz. can Rotel (choose your spice level)
  • 1 cup shredded cheddar cheese
  • 2 large chicken breasts, diced (raw)
  • Salt and pepper to taste

Instructions

  • Prepare the Ingredients:
    • Gather all ingredients. If using black beans, rinse and drain them well.
  • Combine in Crockpot:
    • Dump the cream of chicken soup, drained black beans (if using), and the can of Rotel (including juice) into the crockpot.
  • Add Chicken:
    • Dice the raw chicken breasts into bite-sized pieces and add them to the crockpot. Season with salt and pepper to taste.
  • Cook:
    • Stir to combine all ingredients. Cover and cook on Low for 6 hours or on High for 3 hours.
  • Add Cheese:
    • About 15 minutes before serving, stir in the shredded cheddar cheese and let it melt.
