Description

This Crockpot Creamy Tortellini is the ultimate comfort food—rich, creamy, and loaded with tender cheese tortellini, Italian sausage, and spinach. It’s perfect for busy days when you want a hearty meal with minimal effort. Just toss everything in the crockpot, and let it work its magic!


Ingredients

  • 1 lb Italian sausage (mild or spicy), crumbled
  • 1 (19 oz) package refrigerated cheese tortellini
  • 3 cups fresh spinach
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  • Brown the Sausage
    In a skillet, brown the crumbled Italian sausage over medium heat until fully cooked. Drain excess grease and set aside.
  • Combine Ingredients in Crockpot
    In the crockpot, combine the browned sausage, crushed tomatoes, chicken broth, onion, garlic, basil, oregano, salt, and pepper. Stir everything together.
  • Cook on Low
    Cook on low for 6-7 hours, or on high for 3-4 hours.
  • Add the Tortellini and Spinach
    About 30 minutes before serving, stir in the refrigerated cheese tortellini and fresh spinach. Cook for the remaining 30 minutes until the tortellini is tender and the spinach is wilted.
  • Stir in the Cream
    Once the tortellini is cooked, stir in the heavy cream to give the soup its creamy consistency.
  • Serve
    Ladle the creamy tortellini soup into bowls and top with grated Parmesan cheese if desired. Serve hot!

Notes

  • You can substitute ground beef or turkey for the sausage if preferred.
  • For a lighter version, swap out the heavy cream for half-and-half or use a lower-fat cream option.
