Ingredients
Scale
- 2 lbs boneless, skinless chicken breasts or thighs
- 4 cloves garlic, minced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper
- 1 cup grated Parmesan cheese
- 1 cup heavy cream
- 1 cup chicken broth
- 8 oz cream cheese, cubed
- 1 lb uncooked pasta (penne or rotini work well)
- 1 tablespoon olive oil (optional, for extra flavor)
- 1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
- Place the chicken breasts or thighs into the bottom of your crockpot.
- Add the minced garlic, garlic powder, onion powder, Italian seasoning, salt, and black pepper over the chicken.
- Pour in the chicken broth and heavy cream, then add the cubed cream cheese. If desired, drizzle a tablespoon of olive oil over the ingredients for extra richness.
- Cover and cook on low for 6-7 hours, or until the chicken is fully cooked and tender.
- Remove the chicken from the crockpot and shred it with two forks.
- Stir in the Parmesan cheese until fully incorporated, then return the shredded chicken to the pot.
- About 30 minutes before serving, cook the pasta according to package instructions. Drain and add it to the crockpot.
- Stir the pasta into the creamy sauce, ensuring the pasta is well-coated.
- Garnish with fresh parsley if desired, and serve warm.
Notes
- You can use chicken thighs instead of breasts for a juicier and more flavorful result.
- For a lighter version, substitute the heavy cream with half-and-half or a lighter cream alternative.
- Add some spinach or mushrooms for extra flavor and nutrition.
- If you prefer a thicker sauce, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water) during the last 30 minutes of cooking.
