Description

This Crockpot Garlic Parmesan Chicken Pasta is the ultimate comfort food. Tender chicken cooked with garlic, creamy Parmesan sauce, and pasta creates a deliciously creamy, flavorful meal with minimal effort. Perfect for busy nights!

Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 8 oz cream cheese, cubed
  • 1 lb uncooked pasta (penne or rotini work well)
  • 1 tablespoon olive oil (optional, for extra flavor)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Place the chicken breasts or thighs into the bottom of your crockpot.
  2. Add the minced garlic, garlic powder, onion powder, Italian seasoning, salt, and black pepper over the chicken.
  3. Pour in the chicken broth and heavy cream, then add the cubed cream cheese. If desired, drizzle a tablespoon of olive oil over the ingredients for extra richness.
  4. Cover and cook on low for 6-7 hours, or until the chicken is fully cooked and tender.
  5. Remove the chicken from the crockpot and shred it with two forks.
  6. Stir in the Parmesan cheese until fully incorporated, then return the shredded chicken to the pot.
  7. About 30 minutes before serving, cook the pasta according to package instructions. Drain and add it to the crockpot.
  8. Stir the pasta into the creamy sauce, ensuring the pasta is well-coated.
  9. Garnish with fresh parsley if desired, and serve warm.

Notes

  • You can use chicken thighs instead of breasts for a juicier and more flavorful result.
  • For a lighter version, substitute the heavy cream with half-and-half or a lighter cream alternative.
  • Add some spinach or mushrooms for extra flavor and nutrition.
  • If you prefer a thicker sauce, you can add a cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water) during the last 30 minutes of cooking.
