- 4 medium potatoes, peeled and thinly sliced
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika (optional)
- 1 tbsp vegetable oil (for cooking the beef)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- In a large skillet, heat the vegetable oil over medium heat. Add the ground beef, chopped onion, and garlic. Cook until the beef is browned and the onion is softened, about 5-7 minutes. Drain excess fat if necessary.
- In a mixing bowl, combine the cream of mushroom soup, sour cream, milk, salt, black pepper, and paprika (if using). Stir until smooth.
- In the crockpot, layer the ingredients starting with half of the sliced potatoes at the bottom. Add half of the cooked beef mixture over the potatoes, then pour half of the soup mixture over the beef.
- Repeat the layers: add the remaining sliced potatoes, followed by the remaining beef mixture, and then pour the rest of the soup mixture over the top.
- Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, or until the potatoes are tender and fully cooked.
- About 30 minutes before serving, sprinkle the shredded cheddar cheese on top of the casserole. Cover and continue to cook until the cheese has melted and is bubbly.
- Garnish with fresh parsley (if desired) and serve hot.

- If you prefer a different cheese, feel free to use mozzarella, Monterey Jack, or a cheese blend.
