  • 1 lb sirloin steak, cut into 1-inch cubes
  • 4 large russet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup beef broth
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 6 slices cooked bacon, crumbled
  • 1/4 cup green onions, chopped (for garnish)

Instructions

  1. Prepare the Ingredients:
    Cube the sirloin steak and chop the potatoes and onion. Mince the garlic and cook the bacon if you haven’t already (you can do this in advance and crumble it later).
  2. Layer in the Crockpot:
    In the slow cooker, layer the potatoes, steak cubes, onion, and garlic. Sprinkle with salt, pepper, paprika, and dried thyme.
  3. Add the Sauces:
    In a separate bowl, mix the cream of mushroom soup, sour cream, and beef broth until well combined. Pour this mixture over the ingredients in the Crockpot, spreading it out evenly.
  4. Cook:
    Cover the Crockpot and cook on low for 6-7 hours, or until the potatoes are tender and the steak is cooked through.
  5. Add the Cheese:
    About 10-15 minutes before serving, sprinkle the shredded cheddar cheese over the top of the mixture and cover again to let the cheese melt.
  6. Serve:
    Once the cheese is melted and bubbly, serve the loaded steak and potato bake hot. Garnish with crumbled bacon and chopped green onions. Optionally, top with a dollop of sour cream.
