Description

Crockpot Pierogi Casserole with Sausage is a warm, cheesy, and comforting slow cooker dish featuring layers of frozen pierogies, smoky sausage, cream cheese, and shredded cheddar.   • 1 (16 oz) package frozen pierogies (cheddar or potato & cheese)
  • 1 pound smoked sausage or kielbasa, sliced
  • 1 cup shredded cheddar cheese
  • 4 oz cream cheese, cubed
  • 1/2 cup sour cream
  • 1/2 cup chicken broth
  • 1/2 medium onion, thinly sliced (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Fresh parsley or chives, chopped (for garnish)

Instructions

  1. Lightly grease your slow cooker with non-stick spray or a bit of butter.
  2. Layer half of the frozen pierogies in the bottom of the crockpot.
  3. Add half of the sliced sausage and half of the onion (if using).
  4. Repeat the layer with remaining pierogies, sausage, and onion.
  5. In a small saucepan over low heat, combine the cream cheese, sour cream, chicken broth, garlic powder, and pepper. Stir until smooth and slightly melted.
  6. Pour the creamy mixture over the layered pierogies and sausage in the slow cooker.
  7. Sprinkle the shredded cheddar cheese on top.
  8. Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until everything is heated through and bubbly.
  9. Before serving, stir gently to mix the layers and sprinkle with chopped parsley or chives.

Notes

  • Use any variety of pierogies—cheddar, potato, onion, or even bacon-flavored work well.
  • You can substitute Greek yogurt for sour cream for a lighter version.
  • For added veggies, stir in some thawed frozen peas or cooked spinach during the last 30 minutes of cooking.
  • Leftovers can be stored in the fridge for up to 3 days and reheat well in the microwave.
